Who we are
My daughter was diagnosed with Celiac Disease when she was 20 years old. We thought she was dealing with long COVID. She was attending college in NYC and got COVID before vaccinations were available. She was moved to an isolation room in the dorm and appeared to have mild symptoms similar to others in her age group. Afterwards, however, she had no energy and could no longer run without getting extremely winded. She generally felt awful. She was being diagnosed with different things including acid reflux which was clear to us was incorrect. Finally, after an endoscopy, she found out she was dealing with Celiac disease. Like many, getting COVID seemed to be the trigger for her auto-immune disease to go into over-drive.
Her small intestine was in very bad shape. She had to take this seriously immediately - no baby steps, no cheating - or her intestine may not be able to heal.
My sister is a dietitian. She called and told me to call her when I was ready to hear the changes we needed to make to our kitchen. From there, we embarked on our journey of finding out what GF foods tasted good, what ingredients were better for baking, what restaurants in our area are celiac safe, etc. Since she was diagnosed in January of 2022, many more products have hit the market.
Since she was diagnosed at 20 years old, she knows how moist, gluten-filled baked goods taste. Fortunately, GF options are plentiful these days and new options are emerging frequently.
Friends and relatives starting contacting us after their children were diagnosed asking for advice, life hacks, recipes, etc. So I decided to make this website to share our life-hacks, altered recipes, travel woes, etc.
