Sheperd’s Pie

Ingredients:

1 GF Pie Crust

1lb. Lamb (cooked, cubed) or Ground Beef (cooked) or Ground Beyond Meat (cooked)

1 cup Sharp Cheddar Cheese, freshly shredded

2 cups GF Mashed Potatoes

1 large sweet onion, diced

3 stalked of celery, sliced

1 tsp. gf minced garlic

1 tbsp butter

Directions:

  1. Preheat oven to 350 degrees.

  2. Add diced onions and celery to a pan with the butter.

  3. Saute the onions and celery on medium heat for ~5 minutes.

  4. Add minced garlic and saute for another 3-5 mintues.

  5. Line 9” pie pan with the pie crust.

  6. Cover the pie crust with the onion, celery, garlic mixture.

  7. Layer the meat on top of the onion mixture, then the cheese and lastly the mashed potatoes.

  8. Cook for ~45 minutes at 350 degrees. The top should be slightly browned on the mashed potato peaks. If the mashed potatoes or crust edges are becoming too brown before it is finished baking, cover the top with aluminum foil.
